Healthy pasta recipe and mixed green vegetables

This recipe for pasta and nothing at all to stop you from using white pasta, whole wheat pasta, rice pasta, spelled pasta or pasta vegetables (like spinach pasta). If you buy a freshly made pasta, you can also use it and add the vegetables to taste.

1 small yellow zucchini
1 small eggplant
1 cup (250 ml) of chicken broth (you can also use vegetable broth)
2 tbsp (25 ml) extra virgin olive oil
4 chopped tomatoes (tomatoes are ideal if you can find them)
2 cloves finely chopped garlic
1/4 tsp (1 mL) pasta or wheat
1/4 cup (50 ml) Parmesan cheese (or cheese grated Parmigiano Reggiano)

The steps to create
1. Cut zucchini the size of a matchstick.
2. Slice the eggplant into small slices
3. Heat the olive oil over medium-high heat in a large nonstick skillet. Put the garlic. Saute until wilted.
4. Add the eggplant and cook, stirring, for about 5 minutes or until they start turning golden color.
5. Add the zucchini, tomatoes and cook, stirring for a good 10 minutes or until the eggplant and zucchini are nice and soft. Be sure not to overcook them.
6. Add salt and pepper to taste.
7. Cook the pasta of your choice in a large pot of boiling salted water according to the instructions on the package. Drain pasta and return to pot.
8. Add the vegetable mixture and grated cheese.
